Spinach Soup

Ingredients:

1 package frozen chopped spinach
1/2 cup fresh onions minced
1 tablespoon butter
1 1/2 cup water
1-2 cups of milk
3 tablespoons sour cream
2 tablespoons flour
2 tablespoons soft butter
1/8 teaspoon sugar
Salt and Pepper to taste
Directions:

Put frozen spinach, minced onions, 1 tablespoon of butter and  water in saucepan. Bring to a boil, then lower and simmer for 45 minutes until spinach is very soft. Add 1-2 cups of milk--depending on your taste. Mix 2 tablespoons soft butter with 2 tablespoons flour in a cup to form a paste. Add to soup and stir until soup thickens. Stir in 3 tablespoons of sour cream, salt and pepper to taste. Heat well.

Notes--frozen cauliflower may be substituted
for spinach.Follow the same directions for Cauliflower Soup.
