Ingredients:
12 ounces bulk Italian sausage
1/2 cup chopped onion
3 cups beef broth
1 14 ounce can plum tomatoes cut
1 cup sliced carrots
1/2 cup chopped celery
1 teaspoon dried basil
1 tablespoon dried parsley
1/8 teaspoon black pepper
2 cloves garlic, minced
1 cup sliced zucchini
1 cup dry rotini or small shell pasta
1/4 cup grated Parmesan cheese

Directions:
Cook sausage and onion in large saucepan until sausage is brown and onion is
tender. Drain off fat. Stir in beef broth, undrained tomatoes, carrot, basil,
parsley garlic and pepper. Bring to boil, reduce heat. Cover and simmer for 10
minutes. Stir in zucchini and pasta. Return to boil then lower heat and simmer
10-15 minutes longer or until pasta and vegetables are tender. Sprinkle Parmesan
cheese over soup and stir in.
